Mazkur maqolada piyoz (Allium cepa L.) po‘stidan tabiiy oziq-ovqat bo‘yoqlarini olish texnologiyalari ko‘rib chiqilgan. Tadqiqot davomida ekstraksiya nisbatlari, eruvchan moddalar konsentratsiyasi, pigmentlarning chiqishi va ekstraktlarning barqarorligi tahlil qilindi. Natijalar shuni ko‘rsatdiki, ma’lum ekstraksiya sharoitlarida yuqori sifatli, sog‘liq uchun xavfsiz bo‘lgan tabiiy bo‘yoqlar olish mumkin.
